for those who are interested, i found proof that there are other christian leftists out there.

also i'm in a very good mood. i have beef stew with sweet potatoes, bacon and wine cooking in the crock pot, apricot tart ready to go in the oven, a full wine rack (happiness is a full wine rack), a new bottle of key lime pie liqueur and a clean house with no bad smells (because i spent the afternoon scrubbing, laundering, and otherwise cleaning). now i can read my book with a clean conscience.


sweet potato and beef stew

1 lb stew meat
2 sweet potatoes, peeled and cut into 2-inch pieces
1 tsp thyme
1 tsp black pepper
1 large onion chopped in large pieces
1 can beef broth
1 tsp salt
1/2 cup red wine (i used yellowtail cab/shiraz because that's what we had open)
2 sticks celery chopped
1 Tbsp cornstarch

put all the ingredients except the corn starch into a crockpot and cook on high 4-5 hrs or on low 7-8 hours. then take everything out with a slotted spoon, add the cornstarch to the liquid, stir and pour over the stew.

apricot tart

1 pepperidge farm pastry sheet, thawed
3 cups pitted fresh apricots or frozen peaches
3 Tbsp flour
1/4 tsp cinnamon or nutmeg
5 Tbsp sugar
2 Tbsp lemon juice
1 Tbsp milk

preheat oven to 375. in a mixing bowl combine flour, sugar and cinnamon or nutmeg. fold in peaches/apricots and lemon juice.
unfold pastry sheet and roll out on cutting board with flour. move to greased baking sheet before adding filling. add filling, fold edges in about an inch around the sides. brush milk around the outside of the pastry. bake 40 minutes or until bubbly. cover with foil last 10-15 minutes of baking. serve warm.

yeah. i'm from the dc area and both my parents are pastoral counselors, so i grew up hearing about sojourners....then i went to seminary in dc and heard even more. then i came here and took hebrew with a lady who used to be part of the commune. good stuff.
