Is your gardening climate anything like Vermont's? My dad has trouble keeping his jerusalem artichokes from taking over too much of the garden... (Enjoy! I suspect they won't be hard to grow.)
i believe we are a bit harsher due to not having the coast so near, but we are not that different from vermont. it's good to know about their habits. i have had good luck in getting invasive plants to behave by planting them where they don't get as much sun as they would like.
what a neat idea! i've never gotten into pasta making, but i suppose i should learn how at somepoint.
what i like to do is roast them(although i hear you can eat them raw). i like them with turnips and potatoes and carrots and parsnips surrounding a roast of some sort, or you can just roast them by themselves with some olive oil, salt and pepper. they are lovely.
