so i got this from an irish cookbook ross and i got in ireland.
so easy. so good.

5 small or 3 large zucchini (in the midwest zucchini are only about 3/4 of an inch wide and about as long as a checkbook)
farmhouse cheese (i used dubliner and have found a new love)
butter.

grease a baking pan and preheat to 350. cut the zucchini in half and cover with grated farmhouse cheese. put very small pats of butter on top and salt and pepper to taste. bake for 20 minutes.
so Incredibly good.

in other news. ross has been working 15 hour days and is still sleeping now that he has 2 WHOLE days off!!! *dances* maybe he will wake up and we can go to the park. in the meantime, i am going to get groceries and make some spicy black bean soup. it is a cloudy, rainy sort of day and i thought to go biking, but am scrapping that idea in favor of soup.
there was a place in annapolis, my favorite coffee shop, called 49 West. they always had a wonderful thick black bean soup served with onion bagel chips. i'm going to see if i can't duplicate it.

knowing the very little i do about cooking, i'm going to bet that you can't duplicate it but that instead you'll come up with something differently yummy & also resonant of the original. you might have more special cooking fu than me, though, & nail it. :)

i r jealous of your domestic bliss. it's rainy-cloudy here too, & i have nobody to cook for but me. :( SO i went to ty's house to bring in his mail, stole from his fridge whatever was likely to spoil before he got back (the stuff that wasn't dead already--if i'm *really* nice i'll go clean that out too, but i haven't done enough self-discovery to know if i'm that nice or not yet), & came home & made myself an over-stuffed omelette w/some neufchatel & a whole green pepper that wasn't going to make it 'til i get home on tuesday. little garlic & onion, little chili-sesame oil & chili powder to make the pepper a theme & not a lonely vegetable (since it's the only veg in either house today!) & i ended up with very tasty goodness. so there--i didn't wanna share it *anyway.*

is that the coffee shop you took me to for dessert that one time i came up to annapolis?

Oooo...
We have zucchini that'll be full-grown later in the season. I can't wait to try that recipe!
Looks delicious.
