2 cups cooked lentils (bring to boil and simmer for 20 min)
1 can chic peas
1/4 cup diced red onion
1 chopped avacado
1/2 cup chopped walnuts
2/3 chopped yellow pepper
2 small chopped tomatoes
juice of 1 lime
1/4 cup walnut oil
1/4 cup red wine vinegar

combine all incredients in a large bowl. season to taste with season salt or regular salt if you haven't got season salt. toss. enjoy
makes enough for five meals or sides for 10.
