that's a really good question. you could technically call it all needlecraft/needlework...but that really references sewing and embroidery more. i personally put knitting, crochet, tatting, spinning and weaving in an entirely separate category called fibercrafts or fiberarts (some of it really is art).
interesting...personally, i would put them all in the same category, with various subdivisions, as i don't think you can avoid the commonality of attaching textiles using textiles to make stuff (as opposed to glue or something).
