i can tell you what i have liked and not liked?
i have liked most of what myazaki (sp?) has done minus castle in the sky which i found silly and pointless.
i liked macross plus, the stuff i watched with you and josh, and ranma 1/2. there was some thing about a sorceress and a bunch of other guys hunting bad guys that was pretty funny. the ninja scroll...i thought was okay. entertaining, but i felt like the end didn't go anywhere interesting. i really liked the vampire hunter d stuff.
i LOVED ghost in the shell and i thought akira was kinda - meh. it is important historically for anime in the US i guess, but it wasn't my cup of tea.
the truth is i don't care much about genre, but i am more interested in stuff that is complicated or interpersonally or morally interesting.

I actually liked Howl's Moving Castle... oh wait, you're referring to Laputa... nevermind.

For complicated try: Samurai Seven, Cowboy Bebop, Neon Genesis Evangelion, the Hellsing OVAs.

I still say you should watch Bleach. It's got a great story line. But then again, I love Bleach.

There is Ghost in the Shell, Stand Alone Complex... but I was never a fan of the movie.

You might also like Mai Hime. Wikipedia all the names and read the summaries to see if they would be like things you enjoy.
