awesome low fat burritos

1 lb lean ground beef
1/2 large onion
1/4 lime
1 Tbs cumin
1 Tbs cilantro
salt and pepper to taste
1 tsp chili powder
1 fresh jalepeno
fat free sour cream
1 can fat free refried beans
salsa
2 chopped roma tomatoes
low fat shredded mozzerella
chipotle tabasco sauce
tortillas

i made this up last night and they were awesome.
chop onions and jalepeno and cook in large frying pan until onions are clear. use a little olive oil if you have to. add ground beef, cilantro, chili powder and cumin. squeeze the lime wedge over the beef evenly and cook mixture til brown. in a small pot, heat refried beans on low.
heat tortillas til soft (i put about 2 Tbs of water on a plate, wet both sides of the tortilla and nuke for 1 minute). put some of everything in your tortilla and serve. should serve at least 4.

If you have to use oil, try sweating the onion and jalepeno in Avocado oil, it has a higher smoke point the olive and the avacado flavor may add something to the mexican theme.

The best part of it is that the fats in Avocodo oil are even better for you then Olive Oil. All monounsaturated fats

interesting...i'm not sure my grocery store carries that, but i'll check.
it seems like it might add the equivelant of cooking asian food in sesame or peanut oil.
i didn't use any oil at all when i made this. i just used the juices of the meat to keep the onions and jalepenos from burning, but that requires some timing skills.
